Duck Breasts Stuffed with Tentation and Wild Mushrooms

Ingredients:

300 g wild mushrooms
- 2 shallots
-
2 cloves of garlic
- 50 g roasted hazelnuts

Salt and pepper
Instructions:

Preheat the oven to 200°C.

Make a duxelles with the mushrooms (if frozen, drain them beforehand).

Finely chop the mushrooms, garlic and shallot.

Chopped the roasted hazelnuts.

In a hot skillet, sauté the garlic and shallot in butter.

Add the mushrooms and hazelnuts.

Let brown over medium heat, stirring occasionally, until all the water from the vegetables has evaporated.

Season and set aside.

Cut the cheese into strips.

Cut the breasts in half lengthwise, but not from end to end.

Inside each breast, place the cheese and spread the mushroom duxelles. Close and tie duck breasts tightly.

In a skillet over high heat, but without any fat, sear the breasts skin side down for 1 minute. Flip and sear flesh side down for 2 minutes.

Bake for 20 minutes at 200°C to finish cooking.
