As we all know, when it comes to a cheese board, presentation is everything.
Placing cheese and the pairings accordingly is important, as well as how you slice the cheese.

Small Round Wheels
For soft to semi-soft round cheeses, as President Camembert, President Brie, always cut them into equal parts, starting from the center to the edge.
A good tip is to cut these cheeses as if you were cutting a cake, making triangular wedges.
Hard triangular cheese wedges
For cheeses like Don Bernardo Viejo Manchego, long triangular format slices are the best option.
Turn the wedge on its side and then cut the triangles as shown in the following image. If the piece is too big for what you’d like you can cut it in half again.
Keeping a piece of the ring on each slice at the end is also the traditional presentation. But it’s good to remember, in cases of wax rind cheeses as a manchego the rind is not edible.
Hard pressed cheeses, such as Comte President should be cut in perpendicular cuts from the end moving up to the rind.
For firm cheese wedges, such as Parmigiano Reggiano and Gran Castelli, uneven crumbles are the recommended presentation.
Using a hard cheese knife, Chunk off small pieces by inserting it vertically pointing down to the board direction. Pull away the crumbles from the wedge with the knife. Don’t worry about creating perfect sizes, this is the time to have fun and be creative.
Cheeses like Parmigiano Reggiano are cooked pressed cheeses, and because of their making process, they are aged for a long time and are very firm.
Semi-hard cheeses, like cheddar cheeses, can be cut into cubes or sliced into small slices and then into square pieces
For cheeses, like the Rouy, it’s advised to cut it diagonally once, to then get to two equal triangles. You can then cut each piece in a half to have 4 to 16 equal pieces.

Few tips if you are planning a party and serving cheese:
- Take the cheese out of the fridge at least 30 minutes earlier, cheese has to be served at room temperature
- The common portion per person is 2oz (57g) of cheese per person
- If it grows together, it goes together: when pairing cheese with food and wine, select options from the same region and it will be a win.
